Today, March 25th, we honor Medal of Honor Day — a day dedicated to recognizing the extraordinary courage, sacrifice, and selfless service of our nation’s bravest heroes.Established by Congress in 1990, Medal of Honor Day commemorates the first-ever presentation of the Medal of Honor on March 25, 1863, during the Civil War. This prestigious award remains the highest military decoration in the United States, presented to those who go above and beyond the call of duty, often at great personal risk.At the Spectracare Foundation, we take this day to reflect on the values these heroes represent — courage, integrity, and unwavering commitment to others.We are especially proud to honor our own Carlton R. Last Thursday, March 19th, 2026, following our weekly Coffee and Conversation at the Carlton R. Rouh Veterans Center, we had another wonderful session of Culinary Arts with Shy Myers.This week’s featured recipe was a delicious Chicken Sweet Potato Bake — and it did not disappoint!
